 Real hon-mirin is a true delicacy of Japanese cuisine. It is traditionally made from steamed glutinous rice, rice koji made from local rice and home-brewed rice shochu. The elaborate fermentation with yeast rice creates its characteristic, natural sweet taste - without any added sugar or artificial additives. This Hon Mirin matures for a full 10 years in barrels, which gives it its multi-layered aroma and a particularly mild sweetness. In Japan, hon-mirin is mainly used for cooking, but it also adds a unique touch as a fine syrup or as a base for cocktails. The careful craftsmanship of our brewers and the long maturation period make this mirin a high-quality luxury food that can be used in a variety of ways - whether as a noble ingredient in the kitchen or as a special speciality for pure enjoyment / without additives
