Koshihikari rice, known as the best rice variety in Japan, is grown naturally. Sasakami, a pioneer of the organic movement in Niigata, has persuaded many local farmers to join this trend, which has been a success both for the farmers and for nature, which has been able to recover and develop into a new biosphere.

Koshihikari rice, grown in the Uonuma region of Niigata Prefecture, is one of the most expensive rice varieties in Japan.
