This is "naturally grown white miso", which is made from naturally grown rice and soya beans.
White miso is mainly used in Kyoto and the Kansai region. It has about 5% to 6% salt, which is less than normal miso.
Our white miso uses 20kg of rice koji for 10kg of soya beans, and it is a miso that brings out the sweetness of the soft rice. In addition, it is processed into ground miso to give it softness and fineness and a pleasant flavour.
It has a lower salt content than normal miso, so be sure to keep it in the fridge.
