Shochu

The Mayan No Tsubuyaki Shochu from Unkai Shuzo is an outstanding soba shochu (buckwheat shochu). The climate in Miyazaki Prefecture is constant throughout the year and the air is particularly pure.

It is aged for at least three years in ebony barrels in a disused Kyushu Railways railway tunnel in the small town of Gokase.

These natural conditions greatly influence the taste of the shochu. It convinces with refreshing, mineral and fine sweet notes, which come from both buckwheat and barrel.
