This vinegar is made from 100% rice vinegar using a traditional production method. It is made from 100% JAS-certified ‘Akitakomachi’ from Akita Prefecture (Junmai sake is brewed in an old-fashioned static fermentation room and matured for a long time) and natural water from the northern part of Hiroshima Prefecture is used. The vinegar is made from 100% organic rice from Akita Prefecture, ‘Akita Komachi’, and is specially adapted to Japanese flavours. JAS Certified
