This does not develop by itself: The rice is usually flavoured with a mixture of rice vinegar, sugar and salt. Uchibori JAS certified sushi seasoning vinegar is ideal for this type of seasoning. It is milder and less acidic than many other types of vinegar, which means it perfectly enhances the flavour of the sushi rice. It also gives the rice its typical lustre after seasoning. Application: Put the rice in a bowl and cool with a fan or cardboard. Spread 50-60ml sushizu (sushi vinegar) over it and always turn carefully with a spatula.
