Karashi, also known as Japanese mustard, is spicier than most Western mustard varieties and has a slightly different flavour. It is made from a special mustard seed that is grown exclusively in Asia. In Japanese cuisine, karashi is mainly used in soups and stews, such as oden, but also as a dip or seasoning paste. Despite its high fat content, karashi is healthy as it is rich in B vitamins and important minerals such as magnesium, calcium and phosphorus.
