20 lt natural vinegar Uchibori
12 kg sugar
250 gr salt
1 lt cooking sake
30 gr kombu
boil everything, cool down
Seasoning ratio with rice:
Cook 2.75 kg sushi rice, allow to cool slightly, mix all rice with 8 dl vinegar seasoning mixture
