This sake is produced by hanging the fermented sake pulp (moromi) in a cloth bag and carefully collecting the juice, which drips freely under gravity, without pressing. The Yamada Nishiki rice is polished until only 40% of the grain remains and is slowly brewed at a low temperature. The result is a brew that takes time and effort to perfect.
This sake has a silky smooth texture, a full and deep flavour and an elegant, jewel-like aroma. Youthful yet full of dignity, this is our brewery`s most prized Junmai Daiginjo sake. It was chosen as the toast of the 42nd G7 Summit held in Ise in 2016.

This Junmai Sake (rice, koji and water) is produced by natural fermentation and diluted with clear water to the alcohol content indicated on the bottle. NO alcohol is added in the process.
