(Miyabi no Tomo Nakadori) Junmai Daiginjo Genshu produced using the Muroka Jikakumi technique, which gives the sake a fresh tingle. From the press without filter directly into the bottle via a short continuous pasteurisation and into the fridge.
Nose fruity aroma, pear, muscat, cassis sauvignon blanc. Palate very tingling, elegant sweetness and acidity followed by soft umami, tart and dry, long finish of chestnuts.
