Binchotan for Shichirin - Keisodo Grill
1 Beutel / 0.5 Kg Beutel / JapanBinchotan charcoal or Japanese white charcoal
Weight: 500 gr
This original Japanese Binchotan from the Wakayama prefecture is the only one with a seal of quality that gives an even glow and heat of only 1,000°C over a long period of time without sparks and smoke, but with a very high infrared radiation it has a lot of firepower. It closes the pores of the food immediately and the juices remain inside and do not escape, which is of course what chefs want.
The Binchotan charcoal is only specially burnt from a special holm oak by qualified charcoal burners. This technique from the Edo period has a long tradition. The process is very time-consuming and demand can hardly be met. There is also a shortage of young people, which further increases the price.
Binchotan is harder than hard coal and sounds like metal when struck against each other. It is also used in Japan to eliminate bad odours in rooms or in the refrigerator or to soften water and remove chlorine. In other words, like a filter. You put it in a container with drinking water and leave it for a short while before drinking it.
We only import thin and short pieces to make firing up and grilling easier. This high-quality charcoal can be smothered with oxygen at the end of the barbecuing process so that it can be used again the next time. Good Binchotan can glow for up to 4 hours.
