Amazake is a traditional sweet drink in Japan. It is often consumed there by mixing it with three times the amount of water and possibly some fresh ginger or various other fruits. Amazake is made from cooked rice and fermented using rice koji. Koji amazake was consumed over a thousand years ago.
Why does amazake taste sweet?
Rice koji contains many enzymes, including amylase and glucoamylase. These break down the starch in the rice into glucose. The glucose concentration of koji amazake therefore reaches around 20%.
