Shiso is mostly used raw and unprocessed: as a flavouring agent, for colouring or as decoration, as the leaves are very attractive. It is also used in sushi, sashimi and tempura. For example, shiso gives sashimi a wonderfully fresh flavour. Dried red shiso is sprinkled over rice as a seasoning or used in hot dishes and soups.
