Akazu - Red sushi vinegar
The main ingredient is 100% ‘Fukucho’ sake pomace, which is produced in Hiroshima Prefecture at the Imada Shuzo sake brewery. Water is a very important ingredient in the fermentation of Akazu. The company has three water springs at a depth of 150 metres on its premises in the north of Hiroshima, very close to our producer Sennari. The melt water is filtered through the various layers of earth and is of a very high quality all year round. Through a special method of long-term maturation, Fukucho Sake pomace and groundwater is fermented to vinegar and gets a red/brown colour. Applications: Sushi vinegar Pure red vinegar - 60cc, sugar or Hon Mirin 3 tablespoons, salt 2 teaspoons. Mix the ingredients Sushi rice Mix 1 cup of rice (approx. 320 g) with 2 tablespoons of sushi vinegar.
