JAS certified Mochi flour / Shiratamako (白玉粉), formerly known as kanzarashiko (寒晒粉), is a white flour / granulate made from Japanese glutinous rice (mochigome もち米) with a fine flavour.

During production, the rice is washed, soaked and ground with a little water without increasing the temperature. The mass is sieved, dried in the sun and pressed into granules. The flour produces particularly elastic and sticky end products.
