Ponzu is a seasoning sauce made from citrus fruits and soya sauce and is used in Japanese cuisine. Ponzu is traditionally served as a dipping sauce with tataki (briefly seared meat or fish that is still raw on the inside), dumplings (such as gyoza or momos), sashimi, nabemono and shabu-shabu.

The sauce is made from the juice of citrus fruits such as yuzu or sudachi. The common variant of ponzu, which contains soy sauce, is known as ponzu shōyu (Japanese: ポン酢醤油) or simply ponzu. It is thin and dark brown in colour, with a sour and spicy taste.
