Hoshigaki
are traditionally dried persimmon fruits from Japan that are made by a slow drying method. The preparation involves drying persimmons, which are peeled and hung until they form a natural layer of sugar on the surface. This method, which has been practiced for centuries, ensures that the persimmon develops a delicate, sweet consistency and an intense taste.

These dried persimmons from Shimane with carefully controlled moisture content offer a delightfully juicy and pleasant texture. Thanks to the traditional production method, they remain particularly aromatic. Hoshigaki is often served as a tea sweetener and is known for its aromatic connection to honey and flowers.
