For over a century, the Ogasawara Mirin Brewery in Hekinan City, Aichi Prefecture, has been producing the famous Mikawa Mirin. This special hon-mirin is made from homemade glue rice. Rice koji, rice shochu and matures for four years without heating. The result is a complex umami, a fine sweetness and a full-bodied aroma that give food a distinctive taste. Over time, the color of Hon Mirin may become slightly darker, but the quality and flavor remain unchanged.
