Kinako is made from roasted soya beans, for which the beans are roasted and then finely ground. The roasted soya bean flour has a very pleasant, nut-like flavour and is widely used in many traditional Japanese sweets as well as in desserts and ice cream. Kinaco contains a lot of protein and minerals such as magnesium and iron, and as it is considered very healthy, it is often drunk with milk and a little sugar or honey.

Kinako plays a very important role in many wagashi (Japanese sweets), especially in some of the types served in summer, such as warabi or kuzu machi, and many sweets are sprinkled or rolled in it. The addition of kinaco is often decisive for the flavour, especially in combination with kuro mitsu, a dark syrup made from kuro satou (natural dark sugar), this combination is particularly delicious and can be described as a typical Japanese flavour.
